I know what certain vessels carry them, but what are the specifications? Why/How are the images so clear? Does NASA make the camera? etc..

There are many different kinds of cameras used by the astronauts.

The Apollo moon-walking astronauts used Hasselblad 500ELcameras modified for 70 mm film quite extensively, with a 500 mm telephoto lens added on Apollo 15.

I've seen Nikon digital camera bodies used on ISS, as well as Canon digital bodies. Lenses, of course, are chosen based on what needs to be photographed.

The astronauts get their own personal choices of camera for their own personal photos.

Sometimes the shuttle astronauts carry up 90 mm IMax cameras, too.

Photos from deep space are from the Hubble telescope. Which was built by NASA I believe.
