18-10 refers to the chromium and nickel percentages respectively. Stainless cookware does not normally contain any aluminium. If you want to be totally sure, you need to take small scrapings from inside the vessel and get them chemically analysed.

You could also write to the manufacturer of the cookware to furnish you the chemical analysis of the stainless steel used by them.

Stainless steel contains no aluminum period. If it did it would not be stainless steel it would be some other alloy.
