I have recently replaced my tires and the ride and handling are great. I replaced them with the same tires and at 40k miles, even though they are warranteed for 60k miles.

So why is it the tread was still up to par but the handling was so poor in comparison to when they are new? Also the tires felt soft in comparison to when they are new, even though they were filled to specs with air?

They promote them as if they will perform like new until the warranty, but obviously they don't handle and feel that way.

Any ideas would be appreciated

Did you get your car aligned when the tires were replaced? Unless your old ones were worn unevenly, they should not have dropped off much in handling except perhaps in the rain when the deeper grooves in the newer tire can handle more water.

My guess is you were out of alignment and that had more of an effect on the handling than the tires themselves.

A simple fact - rubber ages. It dries out and hardens as it gets older which results in reduced performance.
