And of course, all answers will be subjective!
I think there are several contenders, certainly for me :~
Led Zeppelin ~ Stairway to Heaven
Jimi Hendrix ~ Voodoo Chile {Slight Return}
Meat Loaf ~ Bat Out of Hell
Mike Oldfield ~ Tubular Bells
Queen ~ Bohemian Rhapsody
Lynyrd Skynyrd ~ FreeBird
Pink Floyd ~ The Great Gig in the Sky
Dire Straits ~ Sultans of Swing
There are others I would favour over some of these, but that's just my opinion.

Just one?
Then...Cemetry Gates by the Smiths, as it's probably my favourite song of all time
Others include...Stay (Faraway so Close!) by U2, High Hopes by PinK Floyd, Like a Rolling Stone by Dylan, and so many others...the question is nearly impossible to answer

that's hard to say, but I'mma say anything from Van Morrison (back in the day, not sure what he's up to now), or anything with a story i can follow or good metaphor.
It's really a hard call.
I can go on with the Doobie Brothers, Guns 'n' Roses ('88 - '92), Lynyrd Skynyrd, etc

Won't Get Fooled Again by The Who. After a couple of thousand listens, it still leaves me awestruck every time.
