Hm, good question. I've been wondering the same thing, too.

I would say it has something to do with the way our breathing sounds while we are asleep. Like when our mouth is in a relaxed state, so only half open or less and we exhale and the air pushes through a smaller gap making a "sssssssssss" or "zzzzzzzzz" noise

Maybe zzzzzz's is what it sounds like when you snore.

I always thought it was derived from all the comics that used to have people on the sofa napping or in bed sleeping and there were a string of z's in a bubble over their heads. Z's meaning snoring...so to catch z's means you're going to go to bed and sleep so hard you're going to snore.
