Jerry Garcia (guitarist) ... I'm not a Grateful Dead fan, but he was pretty legendary, and was Hispanic.
Carlos Santana of course (guitarist) -- he started the Afro-Cuban music movement of the 60's ...during Woodstock
Younger groups would include At The Drive In and the Mars Volta (from my hometown -- not all members are Hispanic, though) ...
The Deftones (Chino the vocalist is hispanic too ....)
Dave Navarro (guitarist, formerly of Janes Addiction) is Hispanic
Al Jourgensen - frontman of the band Ministry is Cuban (some Cubans despise the term Hispanic for geographical reasons)

Carlos Santana is pretty much the number one known Hispanic guitarist/musician in the US fusing his spanish roots with rock music
"Zack" de la Rocha is a famous rock activist (and a Chicano as described by his wiki-pedia article) best known as the voice of the politically active rock group Rage Against the Machine
POD aka Payable on Death is a grammy nominated Christian Rap-metal group that made in roads earlier this decade as a secular hard rock group (going as far as number 1 on the modern rock charts with one of their songs)

Santana as many people have said. He's a guitarist, and his influence on guitarists, Latin rock, and rock music in general is massive. He's one of the greatest guitarists of all time, and Santana, his accompanying band, is one of the greatest acts of all time.
