At a thrift store, I bought 2 elephant figurines. One is soapstone I believe and the other is some sort of wood. On both of them the torso area has open holes and you can see a small elephant inside. Is there a meaning/symbol or is it just a baby elephant inside?

It may be, as you say, an elephant with a baby inside. It also makes me think of the Russian metrushka, also called "nesting dolls."
