One is enough BUT in case you bought an SLI ready motherboard that has got two PCIe graphics slot, you have the option to install another similar card. This could help you in the future:

No, just an XFX 640MB 8800GTS D4(fastest GTS made) which flies thru Lost Planet at max settings in DX10 which works for me. If youre a fan of the 8600GT then you should run 2 because 256MB cards just aren't gonna cut it anymore if youre into serious gaming.

2 is not necessary unless you want to sli them and get like 6x the performance of one.
