why doesn't mature RBC's have a nucleas nor mitochondria?

Red Blood Cells start life with both. In their life cycle they loose both. These are lost so the cells can absorb and loose oxygen / carbon dioxide fast. The "dough nut" shape of mature RBS's is perfect for absorption.
