Well, it's not my own ethnic background, but as I've been living in Pakistan for 14 years, maybe you'll accept my answer. (Pakistani and India food are essentially the same.)

So what I would like to offer the world is Pakistani fast food. Made by street vendors, these are some of the most delicious foods I have ever tasted.
1. Dahi Baray - a yogurt based dish filled with boiled potatoes, onions, tomatoes, a grahm flour based dumpling, topped with great spices and fresh corriander.
2. Gol Guppay - two varieties but I like the yogurt based one. These are small puffed crispy balls fileed with a number of delicious things like chick peas, potatoes, tomatoes, onions and spices. Bite sized, you can pop one in your mouth and enjoy the esplosion of flavour.
3. Samosa - Many ppl might be familiar wit these triangular shaped fried pastries stuffed with just about any savory ingredients you can imagine. The best are stuffed with ground beef, peas and potatoes. Served with yogurt sauce or tomato ketchup.
All of these are delicious and I wish I could share them with the world.

I was never into eggplant. I just didn't like the taste/smell of it. Then I tried the Middle Eastern dip Baba Ghanoush. It was spectacular. I was then told it contained eggplant. And then I tried this Iranian dip called Bademjoon. It was great too. Now I like it in all types of preparations. Though it smells soooo bad when roasting/broiling it. Oh well.

Salmon, Jarlsberg cheese ,Rye bread, and Aquavit.(Scandinavian liquor distilled from potato or grain mash and flavoured with caraway seed)
Scotch Whiskey,Walkers Shortbread or crackers &
Crowdie cheese.
....Norwegian & Scottish ancestry.
However, bred & born in aussie so just about anything goes...maybe A meat pie n peas with a side serve of chips, topped off with a cold XXXX beer...."It tastes like sh**, but you can live on it." lol

Soory, this is from my wife's ethnic background: "Lumpia" (similar to Chinese egg rolls) and fried rice!
As I am a "mongrel" of mixed ethnic backgrounds, I am, simply, an American. All of the "American" foods came from elsewhere! (hot dogs, hamburgers, cherry pies, etc.)
