well if you have a PS2 you should get Ace Combat 5 The Unsung War. It has nearly every fighter jet you can think of (F-15, F-22, F-35, F-16, and some Migs and a lot more), has a pretty good story line and nice game play. I don't know what you mean by "arcade-y" because any game with fighter jets is going to be "arcade-y". If you have a 360 i suggest you should get Ace Combat 6!!!! :)

I can only recommend for PC but...here's the list. IL-Sturmovik and IL-Sturmovik Forgotten Battles are superb WW2 flight sims. In actuality (and read the reviews) these planes can actually be flown using all the levers and switches, etc in the cockpit. naturally you can set things in the "options' menu so you can just fly and shoot/bomb without having all the details of flaps, head shake, blood rushing to your head for red outs or black outs.
You should be able to get these now for $9-$12. Very inexpensive for what's rated one of the best flying sims produced.
They deal primarily with Soviet and German campaigns and offer you an extremely large choice of aircraft to fly from bombers to fighters and even the German ME-262's, the first jet prototype. You can also play single missions as American, Finnish, British and Hungarian pilots.
There are several more sims like Sturmovik 1946 which I haven't played but if you're ready to switch theaters of operation, Pacific Fighters is made by the same company as these previous two (UBI/Maddox) and deals specifically with Japanese and American planes and missions as well as each game allows you to choose any plane you desire against any scenario you can put together for a 'quick mission' builder. Target bombers or fighters or hell....take out a bridge, airfield or armour and vehicle convoys and armoured trains.

If its jets you want...same company does "Lock-on". This primarily deals with American and Soviet jets and also affords you to fly the A-10 Warthog. A great tank-killer as far as I'm concerned.

The eye candy is absolutely superb and handling these planes are a dream. The damage you take or inflict can be devestating. Nothing worse than getting hit by German cannon rounds and oil spashes all over the cockpit window and watching in horro as the gauages in the cockpit drop right to zero.
"Cntrl+E" bails you out. That is if you haven't been killed already. Check it out. Go to www.wikipedia.org. and type in IL Sturmovik. Click on the link for the video game and read on. You'll be hooked.
