You check the temp in the innermost part of the thigh or the thickest part of the breast. Be careful the thermometer is not resting on bone, and be sure the internal temp is at least 165 degrees. I go to at least 170 to be on the safe side.

If despite all the warnings to the contrary,you still insist on cooking a stuffed bird then get your temp [165 ] in the deepest part of the stuffing NOT the deepest part of the the thigh.
When food borne illness happens at Thanksgiving it's almost always because the stuffing was cross contaminated and then not cooked to the proper temperature .

till it touches the breast about 1/4 inch above the bone

when it doubt leave it in longer, you can cover it until the last 20 minutes and then uncover for more browning

we have been eating turkey without thermometers for a long time without ever getting sick

You want the thickest part of the meat, probably the breast.
You can get these little plastic testers now, & use several.
Be sure the stuffing is thoroughly looked too though.

In the breast, the thickest area of meat, at the center. Don't push it though the inside.
