I've seen conflicting opinions. Intuition seems to dictate that you should switch them off after 10 minutes - less heat, less wear. But then why is the default something like 30 minutes, and why does my sysadmin set my office computers to never turn off? Something to do with spin-ups? Please help!

Office computers are usually left on so downloads can be pushed down during off-work time. The sleep interval will depend on your particular use. If you sign on, do something, then leave for 20 minutes to have lunch, then go back on a 30 minute interval is fine - no time lost spinning up. If you tend to leave your system for long periods a 10 minute interval is fine. My personal preference is to leave it on all the time and when I am leaving it for awhile, put it to sleep.
