There are a number of films that do not exactly stray from the plot but miss out large chunks of what it the book. The two most famous examples being the Harry Potter and Lord of The Ring series in particular.

War of the Worlds is another film that strays a long way from the plot. But hey that is what Hollywood is all about. Taking an original story adding some computer graphics and turning it into a blockbuster.

every good movie differs from the novel it's based on; it should as it's the other medium, visual and temporal;

the most striking example to me is 'Big Fish', completely redone by John August and seen as the Tim Burton movie; after his script the novel is dull and raw. Check both August's and Daniel Wallace's sites to learn more. You can download a foreword to the script where John August talks what he changed and why and how he restructured the whole thing. Big Fish the novel is really short compared to the script

The James Bond film "Moonraker".

Aside from the title and some character names, the film has nothing in common with Fleming's original novel, which was much more Cold War-set. And it wasn't one of his better 007 novels anyway. But the film is probably the worst of the 007 franchise.

Try John Carpenter's "Vampires" based on the novel "Vampire$" by John Steakley. In the movie the good guys win, in the book the bad guys win. How much different can it get? For comparison purposes, "American Psycho" book and movie have a very similar plot.

'Chitty Chitty Bang Bang' - I loved the book by Ian Fleming (the author of the James Bond books) and was really disappointed in the film which didn't follow the plot of the book at all.
