Rafting in the Grand Canyon. Start in the middle at Phantom ranch and off you go. Always a blast.
Try Western Rivers. a really good company and tour group.

It depends on what you like to do...The northeast offers a lot of outdoor options. There is hiking, skiing, museums, history, a lof things. You should be more specific in what you like to do.
