Legends of the Fall is an extremely good one. Also A Walk In the Clouds, even though Keanu Reeves is a mediocre actor. For real visual stimulation, watch What Dreams May Come with Robin Williams. It's like a big acid trip.

Crouching Tiger, Hidden Dragon and the Joy Luck Club are both stunning. JLC look for the scenes where the older ladies flash back to their childhoods, but also Pride and Prejudice with Keira Knightley, Marie Antoinette with Kirsten Dunst and yeah, Pirates!

Romeo & Juliet (1968)~If I could wander about these settings, I'd be in heaven, especially if I could wear medieval gowns while doing so. I've watched this film more times than I can count, far past 100 I'm sure, and I've seen all sorts of places I could sit and play my bowed psaltery. I already know "What Is a Youth?" and many other period melodies.
Ladyhawke~woods and castles and ruins~~Oh my!
Blue Lagoon (with Brooke Shields and Christopher Atkins)~I don't usually like beaches and such, but this looks especially pretty. I'd like to go shelling on that beach.
The Haunting (remake)~The house is spectacular! I disliked the film, but I watch it for that amazing house!
The Haunting (original)~It's in b&w, but it's an intriguing house that I'd love to explore.
Rooster Cogburn aka Rooster Cogburn & the Lady~I'm not sure where it was filmed, but it's a beautiful landscape, mountainous and forested.
LOTR trilogy~The landscapes are magnificent, and they blend in actual and CGI structures so beautifully. It's simply dazzling. I want to move into one of the Hobbit houses!
POTC series~I go to Renaissance faires and other reenactment events, so it makes me want to step into the scenes.
Legend~Any landscape where I can pet unicorns is simply lovely. *SIGH*
Sky Captain & The World of Tomorrow~The actors are the only reality in this completely CGI world with its pastels and dreamlike quality. Of course, I'd want to dodge giant robots, but I'd love to see "The Wizard of Oz" in that theater! And, a stop in Shangri-La wouldn't be so bad either.
Darby O'Gill & The Little People~I'd step into Ireland any day, but this one has a young Sean Connery singing beautifully~"My Pretty Irish Girl"! I'd love to explore the landscape and might even risk the dangerous terrain. I want to go to Ireland so very much!
the Harry Potter movies~I don't care for the stories, but I love the landscape, especially in autumn and winter. I want to explore the castle, the hut and Diagon Alley, plus everywhere else I can meander. That's why I watch them repeatedly--that and Snape and the Malfoys! *giggle*

One movie that definitely stands out for it's beautiful cinematography and stunning use of colours is the movie called "Charlotte Gray" with Cate Blanchett!!!! It was made back in 2002 and if you haven't already seen it you are definitely missing out! See this movie!! You won't be disappointed as this fits perfectly in the description you gave. Cate is so stunning and beautiful in this movie!!

In no specific order: Avatar Jurassic Park a million (then 2 crowned it) What targets could Come (a shifting portray) Dick Tracy (units, costumes, makeup, colorings... all suitable. a comedian on demonstrate) Who Framed Roger Rabbit Lord of the jewellery trilogy. (Cinematography became awesome!) Blade Runner on the different hand.... Sin city became almost unwatchable.

One movie that I find visually pleasing is "Moulin Rouge." It isn't for the scenery, it is for the colors... "Legends of the Fall" is a pretty movie as far as scenery goes. You're right about "Cold Mountain" as well.
