A lot depends on the country, but many people in Europe do snack, specially the kids still in school.
Chocolate bars are popular all over, several of the American brands but also some 'local' brands.
Muesli bars, cookies, little cakes, candy, again some brands are available in many places others are local or even home-made by the seller.
Ice cream, both the packaged (factory) and the scoops kind, some factory brands like Ben and Jerrie's, some made by the store.
Chips, (in England called crisps,) each country seems to have its own flavors.
French fries, in England often sold with fish, in the Netherlands with meat products, those meat products are also eaten alone.
Hamburgers and hot-dogs.
The big American chains (Mac Donald's, KFC, and alike) do sell a lot too.
In England I have seen many sellers of cheshnuts, freshly roasted.
Other nuts are also eaten for snacks, most areas have a few for sale, often different per region.
Pizza, in Italy it has always been snack food, in the rest of Europe it was a dinner, but is has become snack food again.
And many of the countries have snack food that is local and I just do not remember because I have not been there long enough, or not at all.
If after reading this you wonder why Europeans are not as overweight as the American (on average that is) it is because most snack food is taken in moderate amounts and by young people who still use a lot of energy.

It depends on the country, but bread and cheese are very popular. French, Belgian and German ppl who eat late suppers (e.g. 9 pm) will have bread and cheese at about 5 pm to tie them over til dinner. English ppl have tea at about 4 pm and have tea (with milk and sugar), cookies, pastries and small sandwiches. Nowadays, some ppl in the UK have Coca-Cola or coffee instead of tea. Quite a few Europeans who are health conscious will snack on fresh fruit. It is also possible to get potato chips and similar snacks in Europe.

in general, Europeans don't stack like the us does. with the possible exception of England.
it's common to eat a light breakfast, maybe a roll and coffee, or muesli. The largest meal on lunch, then a light dinner.
