Here's how you can tell. Measure straight up the mount to just below, your shoulder height. That will be your max height for safety. Now do that sit with your eyes closed thing, measure that. Have someone help you. This will be your min. height for comfort. Also, find a shop that sells handlebars. Try a few bars, by holding them up as you sit on your bike. Buy the bars that feel the best. Putting bars on can be very costly. As long as your hands stay below shoulder height, handling is better not worse. Above your shoulders and you start having control issues.

Apehangers (I call them "ARM-PIT VENTILATORS"), originally, (notice how things evolve over time?), they were up only a little from the stock "buck horn" bars. the SLIGHTLY higher bars were more comfortable for long distance.
Then, the testosterone kicked in. Everyone had to be bigger, badder, higher, faster, etc then the next guy, until it got WWWAAAYYY outta hand. With the bars over shoulder height, it decreases leverage for low speed turning, worse as it gets higher.
Many states regulate the height of the bars. Some state the grips can be no higher than the rider's shoulders when astride the bike. Others have a specific measurement from the seat height.
As for myself, higher than the shoulders and my hands go numb (lack of blood flow, I assume) after a while.

Hells angels brought on the ape hanger bars back in the sixties.Any highth more than18 inches above the seat was illegal and probably still is.The reason is that it is to dangerous to control the bike at taller highths.They really have a cool look to them though.Sonny Barger (hells angel) and Peter Fonda were friends .I see they are really popular again.

They came around in the late 50's when guys were building and riding bob-jobs. (Notice I didn't say "bobbers" there was no such word back then") they used to take off all the useless crap. like crash bars. One day somebody figured out he could re-bend his old crash bars and make himself a pretty cool looking set of handlebars and ape hangers were born.

The history of mine was on my bicycle and it was stolen, not once, but twice. It was very popular with the bicycle stealing crowd. I don't know why anybody would want them on a motorcycle. Impressed the hell out of me when I was a kid though.
