For instance, if I go to McDonalds and find a razor blade in my burger, I will want to sue them, for say, $1,000,000. McDonalds might know that they are going to lose in court, so they offer me $500,000 if I drop the lawsuit. If I take it, then we settled out of court.

This can dramatically lower the costs of the case, and expedite resolution.
A court case only goes fowards when one of the two sides cannot come to an agreement, or where a judge is needed to approve the results, such as in a criminal case with a plea bargain.

You see this in a civil case (as opposed to criminal) when the parties involved in the suite reach an agreement before the court has a chance to rule on the issues. It's as if they say "nevermind judge, we worked it out ourselves".
