I don't know how old she is, but I noticed her getting thinner hair on her head first, then behind her ears, and now it's a thinning stripe down her back. I feed her more than she needs and she's really fat, but she's balding. Any advice?

She sounds like she's simply old. We recently lost a rat who was well over 2.5 yrs old & during her final months her fur became thinner in places. One of our mice, no idea how old but we'd had her for over a year, also had thinning fur near the end of her life.
She could also have a nutrient deficiency, despite being plump, or possibly mites & a vet could confirm & treat these problems.
If she's not sick & doesn't seem to be in distress but is just old, spoil her & love her as long as she's got a decent quality of life.
