Depends where you are starting from and going to. I recommend driving I-40 and following parts of Route 66. There is a ton of stuff to see along the way and you get a variety of landscapes and cities. I-40 follows a lot of Route 66 so you can get off at certain exits and then get back on the main highway. Of course if time is not an issue I would recommend driving 66. Takes a lot more time than the highway but WOW it is an awesome drive with some really cool sites along the way. There are just so many places to see and stay. I really like this drive and make it all the time. Here are some sites you might find interesting:

It list some of the smaller highways in America great roadtrip ideas! Sometimes it is just much better to take the “back” highways and get off the interstate! You get to see so much more. This site has plenty of ideas!

I have used I-10 for all of my cross country treks... From Talahassee to Los Angeles... But if you're not planning a trip that far south, then I'm not sure...

But I-10 has deffinately got a lot to see along the way!!

What's your starting point?
My discovery is that is that E-W interstates get progessively better as you go north. To call driving the aforementioned I-10 boring and mostly ugly would be kind .
My personal choice would be I-80 or I-90
