Electric Eels have all their vital organs at the front of their body, leaving the back 4/5ths of their body to create the electricity. They use a complex system of electrolytes in 3 of their organs (the Main Organ, Hunter's Organ, and Sach's Organ) in a specific order. The electrolytes lined up like this produce electricity which is magnified by the other organs, creating a building shock. They do not shock themselves because they are producing the energy and directing it through their skin, away from them. If they didn't direct it away from them, they would be shocked.
