it was forging someone's signiture and that is it. Would there be jail time or jsut probation?

Depends on a lot of factors. How much was the loss? What if any record does the defendant have? In California, it can be a misdemeanor or a felony. It can be probation, it can be jail, or community service, a fine, restitution and if serious enough prison. Need more details.
