Simply because there are no words in Chinese that say, Big Mac.

"Big Mac" probably doesn't translate well into Chinese, so they chose something else that represents something "big". Dinosaurs are popular in China, so they went with that theme.
A good example is the Chevy Nova in the 1970's...it was exported to South America without changing the name and the Chevrolet Corporation didn't know why it wasn't selling. Finally, someone who spoke Spanish told them that Nova in English means "Bright Star", but "No Va" in Spanish, literally means, "No Go"...in other words, "doesn't work". So they did the wise thing and changed the name.

maybe because the food is so unhealthy and fattening that it makes you look as fat and big as a tyrannosaurus rex
