You can have inverted question marks, exclamation marks so why not asterisks?

Because the asterisk has six lines crossing through the middle; it is geometrically perfect and has six points of rotational symmetry.

In other words, who would be able to notice whether it was inverted?

because no language, to my knowledge, uses the inverted asterisk so there is no need for it.
