The most important thing is to drain all the water out of the cooling manifolds. There should be some draincock valves, or you could remove a water hose or two then put them back on. Then crank the engine for a few seconds to get any additional water out of the system.
I would then add some anti freeze to the system by removing the hose from the highest point in the system and pouring it in. Remember if you crank the engine after that anti freeze is going to spray out the water exaust. So don't do that. In the sping drain the antifreeze and dispose of properly.
There are some carburator sprays and conditioners you can use also. Dry crank the engine while spraying this in the carb. These inhibit condensation and rust. There are some oil additives which inhibit condinsation.
One point is ventilation. Just like an attic, proper ventialtion is key to keeping the boat dry.
With our winter canvas cover, I would put a plastic dock bumpers on the egde of each side of the boat. That just lift the canvas off the boat a few inches, and allow air to flow through. Shim up the motor cover a few inches, again to let air flow through.

I used to fill a five gallon bucket with antifreeze/water solution sliding the bucket up past the intake on the out drive. Start the engine, the pump will send it out through the exhaust and pump stream, capture what you can to avoid ground pollution and pet exposure.
On other occasions I have removed the water pump hoses and lowered the out drive, it drains most of it, never had a freeze up even at +10º

take the boat out of the water and let it drain out. if you have a fresh water tank you drain out as well. for the fresh water tank they have an antifreeze that is biodegradable. you can use it for both the engine and tank
