I usually have 6 players but one player can't make it. so how many minutes should each player play, to get equal time

3 players on the field x 40 minutes = 120 player-minutes.

120/5 = 24 minutes.

Taking the answer above (which is correct) one step further, you would then rotate the players every six minutes:

120 minute game / 5 players = 24 minutes/player
24 minutes / 4 quarters = 6 minutes/quarter
