I don't think you can do better than four 5s, unless you are allowed a reciprocal function or a square function. Both of those would seem to be "cheating" however.
(5 + reciprocal(5) ) * 5 = 26
5² + 5/5 = 26
The most obvious answer is the one already given with four 5s:
5*5 + 5/5 = 26
You can also do it with the factorial symbol as follows:
(5! + 5 + 5) / 5 = 26

I could do it using 4 5s.
