So basically, my girlfriend had to pee and there were no bathrooms where we were so she ended up having to hold it for awhile and because she was holding it so long, she had something that resembled an orgasm. What was that?

It probably was a bladder spasm

I have no idea! When I've held it for a super long time like that, I was in pain!

Never had that happen to me. I've always been in excruciating pain when I've had to hold it.
