The Greeks pretty much started it.
If I could suggest one thing, they developed formalised patterns of inquiry, and the concept of collecting evidence and drawing conclusions from that evidence (please note "formalised"). It was the beginning of scientific, rational inquiry in Western culture.
The Jews developed the concept of a monotheist religion.
