Pick up a copy of "The Girlfriend's Guide to Hockey" by Teena Spencer. It's an entertaining read, even for those with hockey knowledge. When I saw it at the bookstore I rolled my eyes but after leafing through it decided to buy it. It covers general rules, penalties, "hockeyspeak" and history with a sense of humor. It might be a good place for her to start.

There's tons of places on the internet to browse for the Rules and Regulations. I've played ice hockey for 20 years and have been an ice hockey official for 10 years and the rules are constantly changing it seems. Here's the Rules And Regulations for the NHL. It includes just about every aspect of the game from Rink Dimensions, Penalties, Icing, Offsides and so forth.

-has three period in one game
-5 players + goalie for each team
- highest score wins
-rule almost same as football there is a offside where a player can't be ahead of the puck on the opponents side of the court
-body check is legal... you can hit a guy when he has the puck
-penalties are made by putting a player on a penalty box giving the other team a power play which means you'll be playing one-man short for 2 minutes this is the equivalent of free throws in basketball

try wikipeadia or explain it to her yourself, it's really a very easy sport. tell her about icing (puck shot from behind center line and crosses the goal line on the other side of the ice, without being touched by ANYONE and without the goalie getting out of his crease) and off-side (an attacking player being in his attacking zone before the puck,... you can worry about adding stuff to that later). if she undestands that, then she understands the basics of hockey. let her watch, explain as you watch together and maybe let her see the wikipedia site.

Its like sex. A lot of guys tripping, falling, checking, fighting, and competing to get it in. And she is the goalie.
But that isn't for everyone. I had plenty of opportunities to simplify hockey for girly-girls and that one got the most laughs and actually helped them.

If she's like my wife, as soon as she hears "three periods" she will lose all interest.
