I know it's 80% for a plant cell but I was wondering what the maximum percentage was for humans.

Adipose (fat) cells can be almost all one single vacuole, with everything else pushed to the perimeter of the cell. Here is a link with more detail. They mention an 80% of the total cell, so perhaps this is the limit for animal cells, also.
