On the Home tab, in the Styles group, right-click Normal, and then click Modify.
Under Formatting, click Double Space.
Formatting for the entire document changes to double spacing.

Type out your essay first, then select all of the text, next, on format, go to paragraph, then spacing....see the drop down arrow under line spacing? Change to double space. Done!

This is sort of off topic, but I find many people doing this. Remember that Word 2007 has many new features, and the documents have a different extension: instead of .doc in the previous versions, now it's .docx, meaning that you most likely will not be able to successfully open a 2007 saved .docx in a previous version of word without some errors. Just make sure to save your documents as .doc if you plan on opening them with a previous version. Again, that was off topic, but a mistake that people often make.

Right-click anywhere in the blank space outside of your document. Select "Paragraph..."
