If the total kinetic energy of a colliding proton and anti-proton increases what difference does this have to the subatomic paticles produced?

As the energies increase, different (and smaller) types of sub-atomic particles can be detected. That's why governments spend hundreds of millions of dollars building bigger and more powerful cyclotrons which smash atoms together at relativistic speeds.
