I am on a waiting list of 2 years to start nursing school and thought I would get an associates in psychology in the meantime as I wasn't sure of which profession I wanted; nursing or therapist. But I don't want a "throw away" degree. What can I do with it?

There is no such thing as an associates in psychology. There is an associates in 'applied science' which leads to a bachelors in psychology but no associates.

You mean, what could you specifically do with the Associate's that you couldn't otherwise do?

Not much at all.
