We've been growing beetroots in our vegetable patch but they're not growing very quickly and some haven't formed - they look just like roots!

Any ideas on how to give them a boost?

They don't need to be thinned out do they?
Beets, like all root crops, require lots of phosphorous and (less nitrogen) than most other crops. An overabundance of nitrogen will cause big, leafy tops and spindly little roots.
You might want to test your soil for the phosphorous content.
