The "off season" in Florida begins in September thru maybe February.
Most Hotels/motels and condos reflect this in therir rates.
For an example check out;

Some areas in Florida have virtually no off season. That said, the Autumn is the off season, from mid September to mid December. Overlapped with Hurricane Season.

Dec, Jan, Feb is more of a shoulder season.

Peak season would be from December to April. Times when Florida is warm and much of the rest of the country is not. Florida does not slow down much from April to September as that is prime beach and vacation season for the US. As such, I would say that October and November are probably the slowest periods. Those are also peak hurricane months though the season has been slow this year.

really speaking there is no off season. there are times of slower periods though.right now most hotels do offer cheaper rates to bring people in.depending on which city you go to depends on the rated. in southwest florida( cape coral, naples ,fort myers etc.) you will find rates will vary between 29.00 and up a night. as of now in fort myers vacationing families have been leaving and the snow birds are starting to come back in droves already (bring the money) also dont forget to find out if the city you want to go to does a bed tax (our hotels add it durn snowbird season).

Off Season in Florida would be considered June-July-August. I tried to find a B&B in July and found most of them were CLOSED!
Although, there were still lots of tourists when I was there in July.
And the airfares are lower that time of year. They are even lower if you fly mid-week to mid-week.
