Any particular reason as to why Lord Shiva's 3rd Eye is Verticle?

It is the eye of intuition. It is there in all human beings, and can be developed by concentrating in the middle of the eyebrows, how they show in a picture of Lord Shiva. That representation is to tell you that each of us are having it. Regarding destruction when Shiva opens his 3rd eye, actually means, through the eye of intuition when one is able to open the doors of knowledge, then the destruction of ignorance is done.

are you sure about lord shiva being the only one showing the third eye? since there are other, commonly depicted features on Shiva's head such as the river ganga originating from his hair lock. i thought that the third eye was invisible.
anyway, the significance of the third eye lies in a vision that is all seeing, 360 degrees.

Our normal visopn is about 50 degrees horizontal and 40 degrees vertical. If you want to have a full image of the vertical object, you will rotate the camera. The same rule here. If Shiv wants to burn a tall person he can use the wide angle coverage vertically.
