Well since you aren't saying where you are staying I can only recommend in general.I've been to Santorini this summer and had some great food there and some not so great lol.
In Kamari there are a lot of good restaurants at the boulevard.Stay away from foreign cuisine(not Greek) the italian restaurant we visited there was a disappointment.Stick with Greek cooking,especially fish and meat,both are great.
In Fira city don't miss the restaurants with the roof gardens,the view from up there over the volcano is breath taking especially at sunset.Check the prices since there is a lot of variety,we ate really cheap at a restaurant and the food and the view was wonderful and the staff was really friendly.And on the night we ate there someone asked his girlfriend to marry him at the table right next to us so we weren't the only ones thinking it was an ideal place,lol!
We didn't actually eat in Oia,but from what I've seen the food isn't much better than the one offered in Fira city and the prices are a lot higher.They take advantage of the fact that a lot of tourists go there to see the sunset and are hungry after,since the busses aren't as frequent during those hours.If you wanna absolutely stay there 'till the sun reaches the sea I guess you can eat there,we didn't wait so long,we took the bus back to Fira at 8 o clock and dined in Fira for half the money and an equal astonishing view.
Have fun in Santorini,it's a great island and I'm sure finding a good place to eat will be really easy and the least of your concerns(since you'll be taken away by the magic of the island)

This may sound weird but, when you get there, try to see a dentist. Tell him you just want a check up. Then while you're in the chair ask him where he or she likes to eat. Would they recommend two or three places. They will recommend places that are more likely to be healthy than anything else. When visiting the Greek Isles I actually do this, and they have steered me clear of restaurants that are not high on the list as far as the locals are concerned. I even had one doctor tell me where not to eat because he knew that the personnel in one restaurant had certain diseases.
