Do you have someone who can quiz you? A couple restaurants I've worked for have given me a copy of the menu to memorize. It was easier when my roommate would randomly say "What's in a Happy Camper?", "What's in a Crocque Madame?", "What does it come with?". Having someone else randomly ask prepares you for random questions from customers. She'd ask when I was watching the news, reading the paper, or cleaning. It really worked. Good luck!

I guess they want you to test because that will put you under pressure to get things right. The real test is seeing if you don't crack and go off on someone if you made a mistake so the test is more about patience and remaining calm than whether you know the ingredients for certain drinks ... I would try to memorize the most popular and least popular drinks since those will probably be the ones you are tested on and if you make a mistake, do not get nervous and start shaking. Just remain calm and try again, simple as that.
Of course, they say "easier said than done" but that doesn't apply too much when the true test if your character and not your knowledge of how to make certain drinks. Just make sure YOU leave a lasting impression regardless of the test they give you. Remain positive and you will get the job. (And when you get the job, I want free drinks! J/K)

WELL I WAS A WAITRESS FOR 4 YRS. I WOULD SUGGEST THAT YOU STUDY THE ABREVIATIONS FIRST. THEY ARE THE EASIEST TO LEARN. ONCE YOU GET THAT DOWN ALL YOU HAVE TO DO IS WORRY BOUT WHAT COMES WITH EACH ENTRE. TRY FLASH CARDS OR SOMETHING. PICK OUT KEY WORDS IN THE DESCRIPTION THAT WILL HELP YOU REMEMBER WHAT ENTRE IT COMES WITH.
WELL, ALOT OF RESTURAUNTS EXPECT YOU TO AT LEAST BE FAMILIAR WITH THE MENU WHEN YOU FIRST START. ONCE YOU START DOING IT FOR A WHILE YOU'LL GET THE HANG OF IT.
AND NO IT' S NOT RIDICULOUS CAUSE FOR ONE, ALOT OF PPL LIKE GOING OUT TO EAT. INCLUDING THE ONES W/ FOOD ALERGIES THAT IF YOU FEED THEM THAT, IT COULD BE SERIOUS.
LOOK AT IT THIS WAY, THE MORE YOU LEARN, THE MORE YOU IMPRESS THE GUEST, WHICH MEANS THE BETTER YOUR TIP!
AND IF YOU LEARN WHAT DRINKS GO BEST WITH WHAT, YOU CAN UPSELL WINE OR WHAT EVER TO YOUR GUEST WHICH MEANS BIGGER CHECK MEANS BIGGER TIP!
SO YOU SEE, YOU ARE ONLY BENEFITING YOU SELF!
IT'S ALL GOOD BABY!
AND YES, I KNOW IT IS STRESSFUL AT FIRST BUT SOON IT WILL BE LIKE A PIECE OF CAKE. :)

close your eyes, imagine yourself making each dish, imagine taking the ingredients out of the cupboard and mixing them.
Then open your eyes and explain this to yourself out loud for every item.
When you have been through each one, ask someone to order something from you and get them to ask what is in it. This roleplay will help a part of your brain to learn quicker as you will be doing and remembering, a most effective way of learning.
Good luck and don't get worried about it. You will probably be surprised how much you really do know.

Make flashcards with item on one side and ingredients on the other. Then practice going through them before the exam. Good luck.
