I think "both" is the indefinite pronoun.

Both.

Demonstrative pronouns point out what you want:
(This, That, These, & Those)

Indefinite pronouns do not point out exactly what you want:
Anyone, everyone, both, All, Several, few, etc

EDIT: Which can be an interrogative pronoun if it starts the system. Or, "which" can be a relative pronoun if it is in the middle of the sentence starting a relative clause.

both and that could be indefinite pronouns. I do not think which is any kind of pronoun, but rather a conjunction.
