With theories like a Wave structure for matter that can explain basic function of atoms, why do we not hear about them in school?

Why is there such a wide held belief that an ether does not exist and that everything is particle basis?

The simplest explanation is with the theory of relativity. e=mc^2

Matter is constantly changing from particles to wave energy and back again.

Kepler's 3rd Law, from which Newton got his equation for G and g, is also a statement of what is called viscosity. Viscosity is simply defined as resistance to flow. Water has a lower viscosity then maple syrup. But remember that if you heat the syrup it flows faster so viscosity is a function of temperature . More precisely it is a function of density, that is why when ever you deal with a density you must know the temperature. This is important because gases have viscosity also.
Kepler's 3rd Law says that the period of an orbit, ie how fast the object is going in orbit, its velocity. is proportional to its radius. In other words, the farther you are from the axis of revolution the slower you go. Now there are several ways people have tried to explain this, but the most logical at the time,and one put forward by the always correct ancient greeks was that space was filled with an ether. After all, the ethers known then quickly evaporate and they always go up so they must be returning to their place above the heavier air. Hey, it makes sense to me and to alot of other people.
Newton, the experimenter, in his book Mathmatica tells why he concluded that space can not be filled with ether. He made whirpools in tubs of water and then pulled the plug to create a central whirpool, but they just wouldn't orbit in ellipses so he concluded from this that ether was out.
Pretty lame.

Ether is a mythical substance (conductive medium) old bogus theory. No scientific evidence to support the theory.
The questions concerning the microcosm aspect of matter and energy will be answered with the discovery of the working unified field formula (not to be found in my notes!). (Hurry up and wait about a hundred for this one!)

Sometimes it's better to think in terms of particles, sometimes it's better to think in terms of waves. Fact is, it's both and neither.
When you're far enough along in Physics to run into what's called the 'wave-particle duality' it will all make sense to you.
