There is always the old Classic, The Mirramar in San Diego. Right on the beach and the architecture is world famous. There is a ghost thrown in for fun and the food is wonderful.

Drop south of the border and try The Rosarito Beach Hotel, another classic built as a casino originally by Al Capone.
Lots of small hotels along the coast in Baja between San Diego and Ensenada and nice secluded beaches. Great food too.

Or.. Shoot for a Cottage at Crystal Cove State Park. A really great beach with remodeled homes that were private until recently.
