S What chemical reaction does iodine to the starch in foods that give sit its blue-black color??
I know its something about the iodine fitting inside of the amylose molecules but after tht wat happens??Please help me ty

Starch forms a tube of infinitely long polyglucose molecules. Iodine fits in the tube to form a clathrate. The color of iodine enclosed in the tube is blue. This is not a surprise. Iodine in carbon tetrachloride is purple. Iodine in benzene is red. So why not?
