The oil isn't mixing with the water. Heat rises and the fish stay way on the bottom of the water so as to stay as cool as they can. There is probaby a part of the fish tank that they aren't showing which contains a filtration system that provides oxygen to the fish and keeps the tank clean.
Don't you think it's a bit gross eating something that is fried in oil that is above a tank of live fish? Does it ever mix with the fish waste?

Hi Monster Fish Keeper, I believe [& hope] this was merely a publicity stunt by the restaurant & I agree that after some time there would be a definite lack of oxygen in the water & it would also heat up unacceptably too but as oil floats it looks impressive temporarily for the cameras.

I have no idea, unless there is a filter somewhere that oxygenates the water. The fish couldn't live if there wasn't one, because there would be no air, also, you would think that the oil would get into their gills and suffocate them.Strange.

obviously there is a gap between the oil and the water. All it is is a fish tank underneath a deep fryer, with no real contact between the two.
