I would probably go with the dual SLI configuration. SLI mode is usually faster as you have two processors processing the graphics. 8800 is great, but SLI will get you better framerates.

8800GTX rules! Here is its overall performance in Tom's hardware charts= 2281fps

8600GTS SLI performance= 1668fps

Could not even come close to 8800GTX performance because the two 8600GTS cards only have 64 stream processors combined versus 128 of the 8800GTX.

Single 8800GTX. It has 764ish MB memory, and 2 8800GTS would only have 640. Also, it has a higher clock speed.
