A proton would be two "up" (each at +2/3) and one "down" (at -1/3); total charge +1.

A neutron would be one "up" (+2/3) and two down (-1/3 each); total charge 0.

Of course, this ignores the positive and negative pi muons...but let's not make things too complex for now.
