They will keep their system backup tapes in a fireproof safe, and probably have a backup server in a special room with halogen gas fire retardant measures. Also a big UPS system in case of power blackout to allow time for a critical data backup, and probably paper backup also.

Individual backups range from nothing to a spare hard drive, backup tapes, burning to dvd/cdr, etc.
