I have a peach tree growing its branches really spread out and no thick branch in the middle, is that okay?

It's OK! Your peach tree will be more productive that way.

Most fruit trees are pruned to have an "open center" and a low growth habit. Wide spread low branches and normal. Your Peach is fine.
