I'm afraid to say that Wizzair only fly to Bourgas from Luton & this service ends at the end of October, '07. They do, however, continue flying to Sofia throughout the winter, from Luton.
You can get to Varna, direct, through the winter from Gatwick, with both B.A. and Bulgaria Air, for around £140 - £150 return.
B.A. fly at 1100hrs between the 28th Oct. - 29th March, on Tuesday, Saturday & Sunday.
Bulgaria Air fly at 1735hrs on Monday, Wednesday, & Friday.

Living in N.Ireland I am in the same predicament, but a Bulgarian friend here assures me that at least one budget airline is seriously considering a service from Belfast and Dublin, from next spring.
Until recently, Bulgarian state legislation tightly controlled the operators permitted to fly in and out of Bulgaria, to favour their own airlines Hemus and Bulgarian Air. As a necessary concession to joining the EU, they have had to relinquish this stranglehold, but budget airlines are only now getting their act together.
The Black Sea coast is basically a summer resort, so it is only due to the growing number of UK and Irish owners of property owners there, who wish to visit also outside the summer months, that operators are taking more interest in offering a service.
You might want to consider using Balkan Tours, from Dublin to Plovdiv, then making your way east by internal flight or coach, but again these flights do not commence until December. Car hire is also very cheap, and easy to organise on the web.

If there isn't a direct flight, you can go to London and from there travel to Bulgaria. I did something similar and was the easiest ;)
